Roasted Sweet Potatoes

3 to 4 large sweet potatoes, peeled and diced
4 TBSP Smart Balance Blended Butter – melted
4 TBSP Maple Syrup – mixed with the melted butter
1/3 cup toasted pecans, chopped
cinnamon to sprinkle
Roast your sweet potatoes with a drizzle of olive oil.  Let cool for a few minutes.  Toss with butter and maple syrup mixture and the toasted pecans (you cans use walnuts too).  Sprinkle with cinnamon to garnish.  If you like sweet potato casserole, then this is your lightened up version!
